I've tried quite a few brittle recipes... this was, by far, the most delicious and the simplest. With just 6 easy ingredients and about 8 minutes of dedicated focus time, you can have this yummy treat not only for yourself, but to to share for the holidays as well. Thought this would be a timely recipe post... to gift those sweets-loving people in your life in a tin or to bring to your holiday gathering.
2 cups sugar
1 cup of corn syrup
2 cups of raw peanuts
1 teaspoon vanilla
2 teaspoons baking soda
pinch of crushed sea salt (Maldon Sea Salt Flakes look beautiful)
Cover a cookie sheet completely with foil. Measure out the 2 teaspoons of baking soda and have both the cookie sheet and baking soda ready and waiting before you begin. In a large saucepan, combine the sugar, corn syrup, peanuts and vanilla and cook over a medium heat, stirring constantly. If using a candy thermometer, cook until 300°F, otherwise, watch for the mixture to turn darker brown - this will happen suddenly. Remove from heat and immediately stir in the baking soda. Mixture will bubble and froth - don't over mix - you want to keep the bubbles. Quickly pour the bubbly mixture onto the cookie sheet and do not spread or touch as it will pop the bubbles. Set aside to cool for about 30 minutes, then lift off of cookie sheet and break into chunks.
